For more than 500 years, the Bourdeto has represented a part of our story. It was thought to derive from the time of the Venetian occupation of Corfu. The bourdeto recipe comes from simpler times, based on enhancing the flavour of the fish by using our local tomatoes, onions, and olive oil.
